Dessert Breakfast Pancake German Austrian Untested

Ingredients

  • 3 eggs
  • 100 g flour
  • 1 teaspoon sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/8 L milk
  • 100 g butter
  • raisins

Preparation

Mix yolk, flour, sugar, vanilla extract, salt and milk to a thin dough; whisk the egg-white until it is stiff and mix it carefully with the dough. Melt the butter in a pan and add the dough. Sprinkle some raisins over it and fry it on low heat. Flip the omelette over, tear it in little pieces and fry through. Serve with powdered sugar and apple sauce or “Zwetschkenröster” (plum sauce).

(Serves 1 as a main-course or 2 as a dessert.)

Japanese Soufflé Pancakes

Breakfast Pancake

Ingredients

  • 4 egg whites and 2 egg yolks from 4 large eggs, separated and chilled
  • 6 tablespoons granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 6 tablespoons cake flour
  • ¼ cup milk, chilled
  • ½ teaspoon fresh lemon juice
  • ½ teaspoon kosher salt
  • Unsalted butter, for greasing and serving
  • Maple syrup, for serving
  • Confectioners’ sugar, whipped cream and fresh berries, for serving (optional)

Preparation

Place egg whites in the bowl of a stand mixer or a medium bowl; set aside. Place egg yolks in a large bowl. Add 1 tablespoon granulated sugar, the vanilla and baking powder to egg yolks and whisk until blended. Add flour and milk; whisk until fully combined.

Add lemon juice and salt to egg whites. Using a stand mixer fitted with the whisk attachment or a hand mixer, whip mixture on medium speed until foamy, about 1 minute. Continue to whip over medium while gradually sprinkling with remaining 5 tablespoons granulated sugar. Turn speed to high and whip until stiff, glossy peaks form and mixture doubles in size, about 1 minute. Take care not to overbeat meringue.

Heat a lidded nonstick skillet over the lowest heat setting and set the lid aside.

Using a rubber spatula, scoop about 1/3 of meringue into egg yolk mixture and gently fold almost combined. Repeat with half the remaining meringue until almost combined, then fold in the remaining meringue just until no streaks remain.

Carefully grease the warm skillet and the inside of four 3-inch-wide pastry rings (they should be at least 1 1/2 inches tall) using the butter. Check the heat of the pan by sprinkling a bit of water in it: Droplets should steam off the surface, but not dance or sputter. Place the greased pastry rings in the warm pan and ladle a scant 1/2 cup batter into each ring. Place lid on top of skillet and cook pancakes on very low heat until they start to rise and a few small bubbles start to form on top, 3 to 4 minutes.

Remove lid, carefully slide a flat spatula underneath each pancake and position another spatula on top, then gently flip pancakes in their rings. Immediately replace lid and cook until pancakes are cooked through and spring back to the touch, 2 to 3 minutes. Transfer cooked pancakes to a platter, grease the skillet and pastry rings and repeat to make 4 additional pancakes.

Top pancakes with a pat of butter and drizzle with maple syrup; serve immediately. Serve with any combination of confectioners’ sugar, whipped cream and berries, if desired.

Breakfast Pancake

Ingredients

  • 3 eggs
  • ½ cup flour
  • ½ cup milk
  • 1 tablespoon sugar
  • Pinch of nutmeg
  • 4 tablespoons butter
  • Syrup, preserves, confectioners’ sugar or cinnamon sugar

Preparation

Preheat oven to 425 degrees. Combine eggs, flour, milk, sugar and nutmeg in a blender jar and blend until smooth. Batter may also be mixed by hand. Place butter in a heavy 10-inch skillet or baking dish and place in the oven. As soon as the butter has melted (watch it so it does not burn) add the batter to the pan, return pan to the oven and bake for 20 minutes, until the pancake is puffed and golden. Lower oven temperature to 300 degrees and bake five minutes longer. Remove pancake from oven, cut into wedges and serve at once topped with syrup, preserves, confectioners’ sugar or cinnamon sugar.

Fluffy Strawberry and Champagne Pancakes

Ingredients

Fluffy Champagne Pancakes

  • 2 large eggs
  • 1 cup lowfat buttermilk
  • 2 tablespoon canola oil
  • 1 1/2 cups unbleached all-purpose flour
  • 1/2 teaspoon fine sea salt
  • 2 teaspoons baking powder
  • 2 tablespoon granulated sugar
  • 1/4 cup champagne (I used Brut)

Smashed Strawberry Syrup

  • 1 pound strawberries, hulled and halved
  • 3/4 cup granulated sugar
  • 1/4 teaspoon orange zest
  • 1/2 tablespoon fresh-squeezed orange juice
  • 1 teaspoon cornstarch
  • 3 tablespoons champagne

Preparation

Whisk together the egg, milk, and oil. Set aside.

Sift together the flour, salt, baking powder, and sugar.

Gradually stir the milk/egg mixture into the dry ingredients just until you no longer see any dry flour. It will be a little lumpy - thats okay. Set aside for 15 minutes.

Preheat a griddle to 375 degrees.

For the syrup, combine strawberries, sugar, and orange zest , juice, and cornstarch in a medium saucepan. Smash strawberries and turn heat to medium. Bring to a boil, reduce to simmer for 10 minutes without a cover. Remove from heat and stir in the champagne.

As the sauce is simmering, cook the pancakes. Gently fold the champagne into the batter until it’s just incorporated. Drop 1/4 cup of batter onto a greased griddle. Bake on one side until bubbles begin to form, and the edges start to firm. Flip the pancakes and cook until golden (another couple minutes). Repeat with remaining batter. The recipe will make 9 pancakes.

Top pancakes with warm strawberry syrup, and serve with a mimosa (if you like).

Bacon Scallion Hoecakes

Ingredients

  • 1 c. self-rising flour
  • 1 c. fine yellow cornmeal
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tbsp. sugar
  • 2/3 c. buttermilk
  • 1/3 c. water
  • scant 1/4 c. bacon fat
  • 1/3 c. creme fraiche or sour cream
  • 2 eggs
  • 1/3 c. scallions, thinly sliced
  • 1/4 c. crisp bacon, finely chopped
  • Canola oil, combined with some bacon fat if desired

Preparation

In a medium bowl, whisk together flour, cornmeal, baking powder, salt, and sugar.

In another small bowl, combine buttermilk, water, bacon fat, and creme fraiche or sour cream. Blend well. Add eggs and mix until just combined.

Pour liquid into dry ingredients, and mix just until a thick batter has formed. Stir in scallions and bacon. To keep the hoecakes tender, avoid overmixing.

Heat oil and bacon fat in a cast-iron or other heavy skillet over medium to medium-high heat. Use about an eighth of a cup of batter for smaller cakes, or a quarter cup for larger ones. Cook them as you would pancakes, allowing them to fry on one side for about three minutes or until crisp and golden brown. Flip and cook for another couple of minutes. Replenish oil as needed, to maintain a generous film in the pan.

Batter will keep for a couple of days tightly covered in the refrigerator. If it seems too thick after storing, stir in a bit more buttermilk or water.

German Apple Pancakes

Ingredients

  • 4 eggs
  • 3/4 c. flour
  • 1/2 tsp. salt
  • 3/4 c. milk
  • 1/4 c. sugar
  • 1/2 tsp. cinnamon
  • 4 tbsp. butter
  • 2 medium apples, peeled if desired, thinly sliced

Preparation

Preheat oven to 400. Place two pie pans in the oven to heat. Beat the eggs, flour, milk, and salt on medium speed for 1 minute. Combine sugar and cinnamon and set aside. Take the pans out of the oven and put 2 tbsp. butter in each one, swirling to coat bottom and sides. Spread the apple slices in the bottom of the pans. Pour half the batter in each pan. Sprinkle with cinnamon sugar. Bake for 20-25 minutes until golden brown and puffy.

Ingredients

For the pancake batter:

  • 3 eggs
  • 2 c. flour
  • 4 c. milk
  • 1 tsp. vanilla
  • 1 tbsp. sugar
  • pinch salt
  • 50 g melted butter

For the filling/garnish:

  • berries
  • about 2 1/2 c. whipping cream, sweetened

Preparation

Melt the butter in your pancake skillet (should be big, around 12" at least). Beat the eggs and whisk in the flour until all lumps are gone. Add the sugar, vanilla, sugar, and salt. Pour in a little milk at a time until the mixture becomes a nice paste. (These will be thin pancakes, somewhere between American pancakes and crepes.) Pour the melted butter into the batter. Mix well every time you take a scoop of batter to cook. Cook all the pancakes in butter and let them cool. Whip the cream and sweeten it (you can add some vanilla, too). When the pancakes have cooled, put a pancake on a plate, add a little cream and berries, and repeat until you run out of stuff.

Chai Spiced Buttermilk Pancakes

Ingredients

  • 2 eggs
  • 1 1/2 c buttermilk
  • 1/2 c brewed chai tea
  • 4 tbl butter, melted and cooled
  • 1/2 tsp vanilla extract
  • 2 c flour
  • 3 tbl sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 tsp cinnamon
  • 1/4 tsp ground cardamom
  • healthy pinch ground cloves
  • 1/8 tsp ground ginger
  • 1/8 tsp crushed black peppercorns

Preparation

In a large bowl beat eggs. Add buttermilk, chai tea, butter and vanilla and mix well. Add flour, sugar, baking powder, baking soda, spices and salt. Mix well until mostly smooth. Let batter set for a few minutes.

Heat griddle or pan over medium heat. Add a teaspoon of oil (I used grapeseed oil) to the pan or spray with cooking spray. You can test to see if the pan is hot enough by adding a few drops of water, when the drops start to dance its hot enough.

Pour 2 Tablespoons of batter onto the griddle. Cook on the first side until bubbles that form start to pop. You can also gently lift up the pancake to make sure the bottom is not overcooking, if it is the pan may be too hot and you will need to adjust the heat. Flip the pancake over with a spatula and cook until golden brown. Repeat until all the batter is gone. Let cooked pancakes rest on a heat proof plate in a 200 degree F oven until ready to serve. Maple syrup… that’s nice!


Pumpkin Clove Pancakes

Ingredients

  • 2 cups all purpose flour
  • 6 tablespoons (packed) brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 2/3 cups buttermilk
  • 3/4 cup canned solid pack pumpkin
  • 3 large eggs
  • 2 tablespoons (1/4 stick) butter, melted

Preparation

Preheat oven to 250°F. Mix first 6 ingredients in large bowl to blend. Whisk buttermilk, pumpkin, eggs and melted butter in medium bowl until well blended. Add to dry ingredients and whisk until smooth.

Melt 1 tablespoon butter in large nonstick skillet over medium heat. Working in batches, drop batter by 1/4 cupfuls into skillet. Cook pancakes until bubbles form on top and bottoms are golden brown, about 2 1/2 minutes. Turn pancakes over. Cook until bottoms are golden brown, about 2 minutes. Transfer to baking sheet; place in oven to keep warm up to 20 minutes. Repeat with remaining batter, adding more butter to skillet as necessary for each batch.

Serve pancakes hot with maple syrup.

Citrus Popover Pancake with Mascarpone and Berries

Breakfast Pancake

Ingredients

  • 3/4 cup milk
  • 1/2 cup flour
  • 2 large eggs
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon finely chopped lemon zest
  • 1 teaspoon finely chopped orange zest
  • 2 tablespoons unsalted butter
  • 2 tablespoons softened mascarpone, to garnish
  • Powdered sugar, to garnish
  • 2 cups fresh sliced strawberries or 1 bag (12 ounces) frozen mixed berries, defrosted, to garnish

Preparation

Heat the oven to 450 degrees. Combine the milk, flour, eggs, sugar, vanilla and citrus zests in a food processor fitted with the metal blade, a blender, or in a bowl, and whisk or process until smooth.

Place the butter in a 10-inch pie plate or ovenproof skillet and put it in the oven to melt, for about 3 minutes. Swirl the inside of the pan to coat it evenly with butter.

Pour the batter into the pan and bake for 15 minutes. Reduce the heat to 350 degrees and bake for about 15 minutes longer or until the pancake is nicely browned, cooked in the center and well puffed. Remove from the oven and slide onto a round platter, using a spatula. Spread the pancake with the mascarpone and sprinkle powdered sugar generously on top. Accompany with the berries and serve immediately.

Makes 2 to 4 servings.
