Cocktails Champagne Suze Orange

Ingredients

  • 1 1/2 ounces Suze
  • 1 ounce club soda
  • 1 ounce fresh orange juice
  • 3 ounces champagne or dry sparkling wine
  • Orange wheel and sage sprig (for serving)

Preparation

Combine Suze, club soda, and orange juice in an ice-filled rocks glass. Stir gently to combine. Top with champagne; garnish with an orange wheel and a sage sprig.

Cocktails Champagne Campari

Ingredients

  • 4 ounces dry Prosecco or other sparkling white wine
  • 1 ounce sweet vermouth
  • ½ ounce Campari
  • Club soda
  • Lime wheel (for serving)

Preparation

Pour Prosecco into an ice-filled large wine or rocks glass. Add vermouth and Campari and top off with club soda. Gently stir together; garnish with lime wheel.

Ingredients

  • 1/2 oz. amaro averna
  • 2 oz. fresh grapefruit juice
  • 3 dashes Peychaud’s bitters
  • 2 spoons honey syrup
  • Prosecco
  • Grapefruit twist

Preparation

Add amaro, juice, syrup, and bitters into a champagne flute. Top with prosecco. Garnish with twist.

Fluffy Strawberry and Champagne Pancakes

Breakfast Champagne Pancake Strawberry Untested

Ingredients

Fluffy Champagne Pancakes

  • 2 large eggs
  • 1 cup lowfat buttermilk
  • 2 tablespoon canola oil
  • 1 1/2 cups unbleached all-purpose flour
  • 1/2 teaspoon fine sea salt
  • 2 teaspoons baking powder
  • 2 tablespoon granulated sugar
  • 1/4 cup champagne (I used Brut)

Smashed Strawberry Syrup

  • 1 pound strawberries, hulled and halved
  • 3/4 cup granulated sugar
  • 1/4 teaspoon orange zest
  • 1/2 tablespoon fresh-squeezed orange juice
  • 1 teaspoon cornstarch
  • 3 tablespoons champagne

Preparation

Whisk together the egg, milk, and oil. Set aside.

Sift together the flour, salt, baking powder, and sugar.

Gradually stir the milk/egg mixture into the dry ingredients just until you no longer see any dry flour. It will be a little lumpy - thats okay. Set aside for 15 minutes.

Preheat a griddle to 375 degrees.

For the syrup, combine strawberries, sugar, and orange zest , juice, and cornstarch in a medium saucepan. Smash strawberries and turn heat to medium. Bring to a boil, reduce to simmer for 10 minutes without a cover. Remove from heat and stir in the champagne.

As the sauce is simmering, cook the pancakes. Gently fold the champagne into the batter until it’s just incorporated. Drop 1/4 cup of batter onto a greased griddle. Bake on one side until bubbles begin to form, and the edges start to firm. Flip the pancakes and cook until golden (another couple minutes). Repeat with remaining batter. The recipe will make 9 pancakes.

Top pancakes with warm strawberry syrup, and serve with a mimosa (if you like).

Cocktails Campari Champagne Stgermain Untested

Ingredients

  • 2 cups fresh pink grapefruit juice (from 2-3 grapefruits)
  • 1/2 cup St-Germain
  • 1/4 cup Campari
  • 1 750-ml. bottle chilled sparkling wine

Preparation

Combine grapefruit juice, St-Germain, and Campari in a large pitcher. Cover and chill until cold, about 2 hours. Divide grapefruit mixture among glasses and top off with sparkling wine.

Southern Comfort Champagne Cocktail

Ingredients

  • 1 oz. Southern Comfort
  • dash angostura bitters
  • 4 oz. champagne, chilled
  • twist lemon peel

Preparation

Combine. Variations: Brandy instead of Southern Comfort, no bitters, orange peel; Cognac, extra dash or two of bitters, no citrus.

Cocktails Champagne Gin

Ingredients

  • 2 oz. gin
  • 1/2 tbsp. simple syrup
  • 1/2 oz. lemon juice
  • champagne

Preparation

Mix the first three ingredients (or shake with ice), pour into champagne flute. Top with champagne.
