Sweet Potato Croquettes with Black-Eyed Pea Curry

Ingredients

Croquettes

  • 3 medium sweet potatoes, boiled, peeled and quartered
  • 1 tablespoon oil, plus extra for panfrying
  • 1 teaspoon cumin seeds
  • 1 large onion, finely chopped
  • 1/3 cup grated raw cauliflower
  • 1 1/2 teaspoons ginger-garlic paste
  • 1/4 teaspoon turmeric
  • 1 1/2 teaspoons coriander
  • 1/2 teaspoon ground cumin
  • 1/2 to 1 teaspoon red chili powder
  • 1/2 to 1 teaspoon garam masala
  • 1/2 teaspoon amchur (dry mango powder)
  • 3/4 cup breadcrumbs
  • 2 tablespoons fresh coriander (cilantro), finely chopped
  • 1/2 cup semolina flour or breadcrumbs
  • salt to taste

Black-Eyed Pea Curry

  • 1/2 cup black-eye peas
  • 2 tablespoons chopped onion
  • 3 tablespoons chopped tomatoes
  • 1 tablespoons fresh ginger garlic paste
  • 2 tablespoons grated coconut
  • 1 cup chopped collard greens
  • 1 teaspoon chili powder
  • 2 teaspoons ground coriander
  • 3/4 teaspoon ground cumin
  • 1 teaspoons garam masala
  • 1 teaspoon kastoori methi
  • 1/4 teaspoon turmeric powder
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds

Preparation

_Curry: _Puree tomato, onion, garlic, ginger and coconut to a smooth paste and keep it ready. Heat oil, add cumin seeds, when it splutters, add the ground paste, all the spice powder, salt needed and cook until oil separates. Stir frequently in between. Add the cooked black eyed beans, 1 cup of water and collard greens and cook on low heat for about an hour.

_Croquettes: _Mash sweet potato and set aside to cool. Heat ½ tbsp oil in a pan and add cumin seeds to it. When cumin seeds start to sizzles and color deepens, add finely chopped onions and sauté 5 minutes. Add cauliflower and sauté 3 minutes. Add ginger-garlic paste and saute 1½ mins. Add turmeric, coriander, cumin, and chili powder and sauté them for 30 seconds. Add garam masala and dry mango powder and set aside to cool.

Combine onion mixture with the mashed sweet potatoes. To this add the bread crumbs, chopped cilantro and salt to taste and mix them well.

Form flattened croquettes. Dust each patty generously in semolina.Place 2-3 patties on a hot griddle or skillet with extra oil. Let them cook until the side turns golden brown and crisp. Gently flip and add more oil and cook until crisp and browned, 4-5 more minutes.

Ceylon Curry of Oysters

Main Course Curry Indian Oyster Untested

Ingredients

  • 2 tablespoons butter or coconut oil
  • 4 small shallots, finely chopped
  • 1 clove garlic, minced
  • ½ serrano or Thai chili, seeded and minced
  • 1 tablespoon curry powder
  • 1 large pinch turmeric
  • 1 cinnamon stick
  • 3 cloves
  • 1 bay leaf
  • 1 cup coconut milk
  • Salt
  • 12 oysters, shucked, liquor reserved
  • Juice of 1/2 lemon

Preparation

In a medium saucepan over medium heat, melt the butter. Add the shallots, garlic and chili, and sauté until softened and starting to brown, 2 to 3 minutes. Stir in the curry powder, turmeric, cinnamon stick, cloves and bay leaf and cook for 1 minute.

Reduce heat to low and add the coconut milk and 1/2 teaspoon salt. Simmer for 3 minutes. Add the oysters and their liquor; simmer until the oysters are just firm, 3 to 4 minutes. Take the pan off the heat and add lemon juice and salt to taste. Serve over rice – the rice in the fish recipe that follows would go well – or on hoppers (see the recipe at nytimes.com/magazine).

Kashmiri Chicken

Main Course Chicken Curry Indian Untested

Ingredients

  • 3 lb. chicken pieces, skin removed (pref. dark meat)
  • 4 tbsp. vegetable oil or ghee
  • 3 lg. onions, finely sliced
  • 10 black peppercorns, crushed
  • 10 cardamom seeds, crushed (or 1/4 tsp. ground cardamom)
  • 1 3-in cinnamon stick (or 1/4 tsp. ground cinnamon)
  • 1 2-in piece fresh ginger, chopped
  • 2-4 garlic cloves, minced
  • 1 heaping tsp. chili powder
  • 1 heaping tsp. turmeric
  • 2 heaping tsp. paprika
  • 1/2 tsp. salt (or to taste)
  • 1 c. plain yogurt
  • 1/2 c. white wine

Preparation

Heat the ghee or oil in a large skillet with a lid. Add the onions, pepper, cardamom, and cinnamon and cook until the onions are golden, about 10 minutes. Add the ginger, garlic, chili powder, turmeric, paprika, and salt, and cook for 2 minutes, stirring occasionally. Add the chicken pieces and cook until nicely browned, stirring often. In a medium bowl, mix yogurt with wine. Reduce heat to low and gradually add yogurt mixture, stirring constantly until fully incorporated. Reduce heat, cover, and simmer for about 30 minutes. Serve with rice.

Serves about 6.

Quinoa with Spiced Lentil Dal

Main Course Indian Lentil Quinoa Untested Vegan Vegetarian

Ingredients

For the quinoa:

  • 3/4 cup regular blond quinoa
  • 1/4 cup red quinoa
  • 1 1/4 cups water
  • 1/2 to 3/4 teaspoon salt, to taste

For the dal:

  • 1 cup brown or split yellow lentils (toor dal), rinsed
  • 1 teaspoon minced fresh ginger
  • 1 1/2 teaspoons turmeric
  • 1/2 medium onion (intact), peeled
  • Salt to taste
  • 1 1/2 tablespoons fresh lime juice or 1/4 cup tamarind water (made from soaking 1 tablespoon tamarind paste in warm water for 10 minutes; optional)
  • 2 tablespoons grape seed oil, canola oil, safflower oil or sunflower oil
  • 1/2 cup finely minced red bell pepper
  • 1 plump garlic clove, minced
  • 1 teaspoon cumin seeds
  • Cayenne pepper to taste
  • 3 tablespoons chopped cilantro

Preparation

1. Rinse the quinoa thoroughly and combine with the water and salt in a large saucepan. Bring to a boil, cover and reduce the heat to low. Simmer 15 to 20 minutes, until the white quinoa displays a little white spiral. Turn off the heat, remove the lid and place a dish towel over the top of the pot. Return the lid and let sit for 15 minutes. The quinoa will now be fluffy. Keep warm.

2. Meanwhile, combine the lentils, ginger, turmeric and onion half (don’t chop it) with 1 quart water and salt to taste (about 1 to 1 1/2 teaspoons) and bring to a gentle boil. Stir only once to make sure there are no lentils sticking to the bottom of the pot. Reduce the heat to medium – the lentils should simmer briskly – and cook uncovered until the lentils are tender, 30 to 40 minutes. Stir in the lime juice or tamarind concentrate and add another 1/2 cup water. Stir together and simmer for another minute. Turn off the heat and using an immersion blender, an Indian mathani (a wooden tool used for mashing dal) or a wooden Mexican hot chocolate mixer, partially pureé the dal. It should be thick but not like a pureed soup.

3. Heat the oil over medium-high heat in a small saucepan or small frying pan (such as an 8-inch omelet pan). Add the cumin seeds and allow to sizzle, stirring, for 10 seconds. Add the garlic and cook until lightly colored, about 15 seconds. Add the red pepper and cook until slightly softened, about 1 minute. Remove from the heat and pour over the lentils. Add the cayenne pepper and 1 tablespoon of the cilantro and stir gently. Taste and adjust seasoning.

4. Serve the quinoa with the dal spooned on top. Garnish with chopped fresh cilantro.

Southern Indian Squash Curry

Ingredients

  • 1 lg. butternut squash (or 4 medium sweet potatoes)
  • 1 tbsp. flaked almonds
  • 2 tbsp. oil
  • 2 medium onions, chopped
  • 1 tsp. garlic powder
  • 3 slices ginger, or 1/2-1 tsp. dried ginger
  • 1 red chili, deseeded and sliced, or 1/2 tsp. crushed red pepper
  • 1 tsp. ground coriander
  • 1 tsp. ground cumin
  • 1 tsp. mustard seeds
  • 1/2 tsp. turmeric
  • 3/4 c. coconut milk (about half of a standard 14.5 oz can)
  • 1-1.5 c. baby spinach, roughly chopped
  • 2 tbsp. cilantro, chopped

Preparation

Peel the squash or sweet potatoes. Discard the seeds and cut the flesh into 1-inch pieces. Toast the almonds in a non-stick frying pan over medium heat for 5-7 minutes and set aside. Heat the oil in a large saucepan and cook the onions until lightly browned, stirring regularly, 12-15 minutes. Add the garlic, ginger, chili, coriander, cumin, mustard seeds, and turmeric. Reduce heat to low and cook until fragrant, 3-5 minutes, stirring regularly. Add the squash or sweet potatoes and coconut milk. Stir and cover, simmer for 20 minutes until just tender. Add the spinach and cilantro, and stir until the spinach is just wilted. Serve with rice, topped with almonds.

Easy Indian Burgers

Main Course Hamburger Indian

Ingredients

  • 1 1/2 lb ground turkey or lean ground beef
  • 2-4 Tbl dried minced white onion
  • 1-3 Tbl dried minced garlic
  • 1/4 c water
  • 1-2 Tbl sweet curry poweder
  • 1 tsp dried cilantro
  • 1/4 c crunchy peanut butter
  • 2 tsp chopped crystalized ginger (optional)

Preparation

Cover the minced white onion and garlic with the water for 5 minutes. Drain off any excess liquid and combine the onions and garlic with the ground meat, curry powder, and cilantro. Mix well and form 4 patties. Grill or broil just short of your preferred degree of doneness, turning once. Put 1 tbl of crunchy peanut butter atop each patty, cover the grill, and finish grilling or broiling to your desired doneness–at least another minute to soften and warm the peanut butter. Chop the crystalized ginger into small bits and sprinkle on the peanut butter topping for the final minute of cooking if desired.

Indian-Style Okra with Tomatillos

Ingredients

  • 2 tablespoons vegetable oil
  • 1/2 cup coarsely chopped onion
  • 2 teaspoons ground turmeric
  • 1 pound tomatillos, husked, washed, quartered
  • 3/4 pound okra, sliced 1/2-inch thick
  • 2 large plum tomatoes, chopped
  • 1 jalapeno, seeded, minced
  • 1 tablespoon grated fresh ginger
  • 1/4 cup water
  • 1/2 teaspoon salt
  • 1/4 cup chopped cilantro

Preparation

Heat oil in a skillet over medium heat; add onion and turmeric. Cook, stirring, 3 minutes. Add tomatillos and okra; cook over medium-high heat, stirring until browned and vegetables begin to soften, about 5 minutes. Stir in tomatoes, jalapeno, ginger and water; season with salt. Simmer over low heat until okra is tender and most of liquid has evaporated, about 8 minutes. Add cilantro.

Mulligatawny Soup

Main Course Chicken Indian Soup

Ingredients

  • 2 pounds chicken thighs
  • 3 tbsp. vegetable oil
  • 1 med. onion, thinly sliced
  • 2 cloves garlic, finely minced
  • 1 one-inch piece ginger, peeled and minced
  • 1 tbsp. curry powder
  • 2 tbsp. water
  • 4 c. chicken stock
  • 1/2 tsp. salt
  • 1 c. unsweetened coconut milk (optional)
  • 1/2 c. cooked rice
  • fresh cilantro

Preparation

Skin, bone, and cut the chicken thighs into bite-sized pieces. Heat the vegetable oil over medium-high heat in a soup pot. Add the onion and cook until golden brown, 7-8 minutes. Add the garlic, ginger, and curry powder, and cook for 30 seconds. Add the chicken and water and cook, stirring, until the chicken loses its raw color and the oil sizzles and pools around the meat, around 3 to 4 minutes. Stir in the chicken broth and salt. Bring to a boil, reduce the heat to medium, and simmer until the chicken is cooked through, 20-30 minutes. If using, stir in the coconut milk and simmer for 5 minutes more. Divide the rice among four bowls, ladle the soup on top and garnish with cilantro.

Cinnamon Beef Stew

Main Course Beef Indian Stew

Ingredients

  • 1 cup plain yogurt
  • 1 tablespoon smoked paprika
  • 1 teaspoon curry powder
  • 2 teaspoons garam masala
  • 1 tablespoon soy sauce
  • 2 teaspoons powdered ginger
  • 3 pounds flank steak, cut into 3/4-inch-cubes
  • 2 tablespoons ghee (clarified butter) or extra-virgin olive oil
  • 1 large yellow onion, finely chopped
  • 1 tablespoon minced garlic
  • 2 cinnamon sticks, roughly 2 inches each
  • 3 bay leaves
  • 2 small tomatoes, peeled, seeded and diced, or 1 small can tomatoes, drained
  • Salt, to taste

Preparation

  1. In a large bowl, combine the yogurt, paprika, curry powder, garam masala, soy sauce and ginger. Add the beef and turn to coat. Cover the bowl and refrigerate to marinate several hours or overnight.

  2. When ready to cook, in a Dutch oven over medium-high, heat the ghee or oil. Add the onion and garlic, then saute until translucent, about 5 minutes.

  3. Add the cinnamon sticks and bay leaves, and continue to cook until the onions brown, about another 5 minutes.

  4. Add the beef, marinade and tomatoes. Increase heat to high and bring to a boil. Reduce heat to medium and simmer, uncovered and stirring occasionally, for 20 minutes.

  5. Reduce heat to a low simmer, cover and cook for another 40 minutes.

  6. Remove the cinnamon sticks and bay leaves, then season with salt.

Curried Lamb Burgers with Grilled Vegetables and Mint Raita

Main Course Indian Lamb Untested

Ingredients

Raita:

  • 1 cup plain whole-milk yogurt (preferably Greek-style)
  • 3 tablespoons chopped fresh mint
  • 2 tablespoons chopped fresh cilantro
  • 1 1/4 teaspoons finely grated lime peel
  • Coarse kosher salt

Burgers and vegetables:

  • 4 tablespoons olive oil, divided
  • 1 1/4 cups chopped onion
  • 2 tablespoons minced peeled fresh ginger
  • 2 teaspoons coarse kosher salt, divided
  • 2 teaspoons Madras curry powder
  • 1 3/4 pounds ground lamb
  • 3 tablespoons chopped fresh cilantro
  • 1 1/2 teaspoons cracked black pepper, divided
  • 3 medium zucchini (about 12 ounces), cut lengthwise into 1/4-inch-thick slices
  • 6 green onions, trimmed
  • 1 fresh poblano chile, quartered, seeded
  • 6 small naans (about 6 inches long) or pita breads
  • 1 large tomato, thinly sliced

Preparation

For raita: Mix yogurt, mint, cilantro, and lime peel in small bowl. Season to taste with coarse salt and pepper. Cover; chill until cold, at least 30 minutes and up to 4 hours.

For burgers and vegetables: Heat 2 tablespoons oil in large skillet over medium heat. Add onion, ginger, and 1/2 teaspoon coarse salt. Sauté until onion is tender, about 8 minutes. Mix in curry powder and stir 30 seconds. Remove from heat. Cool onion mixture to room temperature, at least 15 minutes.

Place lamb in large bowl. Add onion mixture, 1 teaspoon coarse salt, cilantro, and 1 teaspoon cracked pepper. Blend mixture gently; shape into six 1/2-inch-thick patties.

Prepare barbecue (medium-high heat). Combine zucchini, green onions, and chile in another large bowl. Add 2 tablespoons oil, 1/2 teaspoon coarse salt, and 1/2 teaspoon cracked pepper; toss to coat. Place vegetables and burgers on grill. Cook until grill marks appear, about 4 minutes. Turn vegetables and burgers over. Cook vegetables until tender, about 3 minutes. Cook burgers to desired doneness, about 4 minutes for medium-rare. Cut zucchini and green onions crosswise into 2-inch-long pieces. Cut chile into thin strips.

Place breads on plates; top with burgers and tomato slices. Mound vegetables on burgers; spoon dollop of raita over. Fold bread up around burgers and serve with remaining raita.
