Grandma Philip’s Corn Casserole

Side Dish Corn Philip

Ingredients

  • 1 box Jiffy corn bread mix
  • 1 can cream corn
  • 1 can corn (drain liquid and save)
  • 1 stick butter (or less)
  • 1 egg
  • ½ cup liquid – from the corn plus milk to make the ½ cup

Preparation

Mix all ingredients, pour into loaf pan and bake at 350 for 25 minutes or until set in the middle.


Peg’s Nut Crunch

Dessert Chocolate Pecan Philip

Ingredients

  • 1 1/4 c sugar
  • 3/4 c butter
  • 1 1/2 tsp salt
  • 1/4 c water
  • 1/2 c unblanched almonds (optional)
  • 1/2 tsp baking soda
  • 1 c semi-sweet chocolate chips
  • 1/2 c nuts

Preparation

Bring to a boil the first 5 ingredients. Heat to 290 F (or until the mixture turns golden brown), stirring constantly. Take off heat and stir in baking soda. Pour into a greased 9 x 15 jelly roll pan and spread out. Melt chocolate, then pour over the candy and put the nuts on top. Allow to cool overnight (in the refrigerator or outside if desired). Break into pieces. Make about 1 1/2 pounds.


Microwave Strawberry Pie

Dessert Philip Strawberry

Ingredients

  • 5 cups fresh strawberries
  • 1 cup water
  • 3 tablespoons corn starch
  • 3/4 c sugar
  • 1 9inch graham cracker pie crust
  • cool whip for serving

Preparation

Place 4 cups strawberries pointing up in pie shell. Mash remaining strawberries. Cook water and mashed strawberries (1 cup). Cook in microwave on high 4 minutes, stirring once. Combine sugar and cornstarch. Stir into strawberry juice. Cook 2 - 3 minutes in microwave on high until transparent, stirring often. Pour glaze over berries, chill. Serve with cool whip.

Dessert Cookie Philip

Ingredients

  • 5 eggs
  • 1 lb powdered sugar
  • 1/2 tsp anise oil
  • 1/2 tsp lemon extract
  • 1 lb flour (plus more for rolling)
  • 2 tsp baking powder

Preparation

Beat 5 eggs until smooth. Add 1 lb. of sugar, and beat in mixer approximately 25 minutes (until you can’t feel the sugar). Add 1/2 tsp. anise oil and 1/2 tsp. lemon extract.

Fold in 1 lb. flour (4 c. sifted) with 2 tsp. baking powder. Roll out 1/2" thick and press with a springerlie board or roller. Let stand overnight. Bake for 15 minutes at 350 degrees. Makes 1 lb, about 6 dozen.


Cheese on Crackers

Main Course Cheese Philip

Ingredients

  • ½ c butter (1 stick)
  • ½ c flour
  • 8 c milk
  • 2 small packages American cheese, torn into pieces
  • saltines

Preparation

Melt the butter, add flour and cook for a few minutes until light brown. Gradually add the milk, stirring continuously to avoid the formation of lumps. Bring to a boil. Add the cheese in increments, allowing one addition to melt before adding the next. Cook until all cheese has melted and the cheese sauce is smooth. Place saltines on a plate and ladle cheese sauce over them. Serve immediately.

Dessert Cookie Philip

Ingredients

  • 1 lb box brown sugar
  • 3 eggs
  • 2/3 cup shortening
  • 1 cup chopped nuts (optional)
  • 1 12 oz bag chocolate chips (or other kinds of chips)
  • 2 ¾ cups flour (11 oz.)
  • 2 ½ tsp baking soda
  • ½ tsp salt

Preparation

Melt shortening, add sugar, and cool. Beat 1 egg at a time into sugar mixture. Add dry ingredients, blend well. Then add chips and nuts.

Use a well greased cookie sheet (with sides). Spread dough evenly with greased hands into pan.

Bake at 350 for 15 minutes.

Garlic Soup

Side Dish Philip Soup

Ingredients

  • 2 tbs olive oil (approximately)
  • 4 large cloves peeled garlic, whole
  • ½ loaf French bread, thinly sliced
  • 1 tbs paprika
  • 1 liter chicken, beef, or vegetable broth
  • 2 eggs

Preparation

Brown the garlic whole in the olive oil in a large pot, then remove the garlic and chop it finely. Brown the bread in the same oil that the garlic was cooked in. Chop the bread into small (crouton-sized) pieces and add the garlic and bread back into the pot and add the broth, then bring to a simmering boil. Beat the eggs and drizzle in.

Serves 4


Peanut Butter Squares

Dessert Cookie Peanutbutter Philip

Ingredients

  • 3 sticks butter, melted
  • 2 cups peanut butter
  • 1 lb confectioner’s sugar
  • 1 1/2 cups graham cracker crumbs
  • 12 oz chocolate chips

Preparation

Mix 2 sticks melted butter, peanut butter, sugar, and graham cracker crumbs together and spread in 15 x 10 1/2 in cookie sheet.

Melt chocolate chips and butter together, pour over peanut butter mixture.

Chill in refrigerator for 2 hours, then let stand at room temperature before cutting.

Dessert Italian Philip

Ingredients

  • 1 big container of mascarpone cheese
  • 3 eggs
  • 24 Lady Fingers
  • 2 c strong coffee
  • 120 g sugar

Preparation

Beat the yolks of the eggs with the sugar

Fold in the mascarpone

Beat the whites to firm peaks

Add the whites to the yolks

In the serving dish add by alternating layers the lady fingers dunked in coffee and the egg mixture

Sprinkle coco powder on top
